Horseradish Sauce / Salsa de Rábano Picante

This horseradish has a story. I brought the original plant from my property in Canada about twelve years ago and planted it here in Ecuador. For a long time, it barely grew, but it never died. I kept tending it, feeding the soil with microbe-rich compost, covering and protecting it, and giving it time to adapt.

Eventually, it took off. I was finally able to harvest the roots, replant the young shoots, and from that point the plants became much stronger and faster. What once took years to establish can now give us a harvest in only a few months.

I am very proud of this horseradish. It comes from the same variety that still grows on my family property in Canada, where my sister now lives, and it has adapted beautifully to our living soils here at Living Ground. The roots are intensely hot, fresh, and full of character.

Our horseradish sauce is intentionally simple, made to let the horseradish itself shine. Strong, fiery, fresh, and very special.
