Our Apple Cider Vinegar is made here at Living Ground from organic apples and a very special mother culture that carries quite a history of her own. She was gifted to me about 13 years ago by a young woman who had received her from her grandmother, and from what we understand, this mother may now be 50 years old or even older. She is incredibly strong, vigorous and alive, and has continued to produce beautiful vinegar for us year after year.
Apple cider vinegar is a true fermented food, created through the work of microorganisms that transform the natural sugars of the apples first through fermentation and then into the organic acids that give vinegar its distinctive sourness and strength. The mother is the living culture at the heart of that process, a complex community held within the strands and layers you sometimes see floating in naturally fermented vinegar. I love that our vinegar is not simply made from apples. It carries a living lineage that has been continually fed, cared for and passed from one person to another for decades.
Traditionally, apple cider vinegar has been used to awaken digestion, support stomach acidity and digestive secretions, encourage appetite when digestion is sluggish, and help the body better work with minerals from food. It is also widely used to support blood-sugar balance, metabolism and circulation. The organic acids produced during fermentation give vinegar many of its characteristic qualities and make it useful both as a food and as an old household medicine.
I especially value apple cider vinegar as part of the relationship between fermentation and the microbiome. Fermentation is microbial transformation, and vinegar is another beautiful example of how microorganisms can take a simple food and turn it into something entirely different, more complex and useful. It is the same principle we see in living soil, where microbial communities transform minerals and organic matter into forms plants can work with. In our own food system, fermentation continues that relationship between microbes, plants and us.
Our vinegar is strong, tart and full of character. Use it in salad dressings, sauces, marinades, fermented foods, mineral drinks or simply diluted in water. Because this is a naturally fermented vinegar made with our long-lived mother culture, every batch carries forward a little piece of the batch that came before it, and I think there is something rather wonderful about that.
