Tomatillo

Description

Tomatillos bring a bright, citrusy twist to the garden, with their little green fruits tucked inside delicate papery lanterns. The plants are vigorous and generous, branching out and setting clusters of fruit that are perfect for fresh salsa verde, roasting, blending into sauces or adding a tangy note to soups and stews. When the husk fills and splits slightly and the fruit turns a soft green or light yellow, you know they are ready.

In the garden, tomatillos grow best in warm, sunny beds with rich, well fed soil. They like similar conditions to tomatoes, but are often a bit tougher and more forgiving. Because they need cross pollination, it is important to plant at least two tomatillo plants together so the flowers can share pollen and set heavy crops. Bees and other small pollinators love the blossoms, so a patch of tomatillos becomes a little meeting place for garden life.

As the season progresses, dropped husks, fallen leaves and old stems return to the soil and become food for the underground community. In a living soil, that steady cycling of plant material helps the microbes build structure, hold moisture and make minerals more available for the next round of crops. Tomatillos are a beautiful example of how a single plant can connect a vibrant, flavorful kitchen staple with the quiet work happening in the soil beneath our feet.
